Today was the family picnic that I had originally planned to make the Watermelon Cake for. However, on Wednesday night, it was brought to my attention that all the food had to be Christmas themed. That completely threw a wrench in my plans! So I had to think of a new game plan. I had already contemplated making the White Russian cupcakes since I love, love, love them! So I decided I was definitely making them again, but decorating them with some sort of Christmas theme.
I remember seeing beach themed cupcakes on my favorite cake blog, Sweet Creations by Stephanie, that I wanted to attempt some time. She also has some great tutorials on making a fondant beach towel and surfboard, which I wanted to incorporate into my design idea. Then, it occurred to me to do Christmas in July cupcakes by bringing snowmen to the beach!I was a little worried of how it would turn out since it was my first time actually decorating cupcakes and I knew it would be a long and tedious process. And it was! On top of that, I had to do all the decorations in one night! I started preparing my beach decorations and snowmen at 930 pm on Friday night and finished at 3am Saturday morning, with a half hour break to nurse the baby.
So I spent 5 hours on the decorations alone! Now, I know most of you would think I’m crazy for wasting my time doing that when I should be catching up on as much sleep as I can being a mommy of two under two. But I enjoyed every minute of it! It’s the only time I have to myself and aside from blogging, there’s nothing else I’d rather do with my free time.
And here’s the product of all my hard work:

Those cupcakes are a little bit adorable. And now I'm hungry. Great. Ya know, I can't even remember the last time I had a cupcake–let alone one that was Christmas themed. I may just have to hit the bakery today.
